Ingredients
- 1 1/2 cups zucchini, shredded (do not squeeze)
- 1/4 cup green onion, sliced (optional)
- 2 large eggs
- 3/4 cup sour cream
- 1/4 cup butter, melted and cooled
- 1 1/2 cups cheddar cheese, shredded
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (180°C).
- Grease a 9×5-inch loaf pan.
- Mix zucchini, green onions, eggs, sour cream, and melted butter in a large bowl.
- Stir in shredded cheddar cheese.
- In another bowl, whisk flour, baking powder, baking soda, and salt.
- Fold dry ingredients into wet ingredients until just combined.
- Pour batter into prepared loaf pan.
- Sprinkle extra shredded cheese over the top if desired.
- Bake for 50–70 minutes until a toothpick inserted into the center comes out clean.
- Cool slightly before removing from the pan.
- Slice and serve warm with butter.
Notes
- Do not squeeze moisture from the zucchini.
- Add 1–2 tablespoons milk or water if the batter is too thick.
- Replace sour cream with buttermilk if preferred.
- Omit green onions if desired.
- Add herbs such as parsley, dill, or chives.
- Add 2 tablespoons Parmesan cheese for extra flavor.
- Substitute Gruyere cheese for a different cheesy profile.
- Sprinkle additional cheese on top before baking for a golden crust.
- Warm slices before serving for the best flavor and texture.
