Description

Rustic Cherry Tarts make the most of fresh summer cherries with a flaky golden crust and juicy cherry filling. This easy fruit tart recipe is perfect for summer parties, 4th of July baking, and simple family desserts.


Ingredients

  • 1 and 1/2 cup all purpose flour
  • 3/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup shortening
  • 1/4 cup ice cold water
  • 4 cups pitted sweet cherries
  • 3 tablespoons sugar
  • 1 and 1/2 teaspoons cornstarch
  • 1 egg, beaten

Instructions

  1. Mix the flour, salt, and sugar in a medium bowl.
  2. Cut in the shortening with a pastry blender until pea sized crumbs form.
  3. Sprinkle the cold water over the mixture and stir lightly with a fork until the dough forms a ball.
  4. Chill the dough for at least 1 hour.
  5. Preheat the oven to 400 F.
  6. Mix the pitted cherries with the sugar and cornstarch.
  7. Divide the dough into fourths.
  8. Roll each fourth into an 8 inch round circle and trim the edges slightly if needed.
  9. Spoon 1 cup of the cherry filling into the center of each dough circle, leaving about 1 and 1/2 inches around the edges.
  10. Gently fold the crust edges over the cherries, pleating as you go.
  11. Brush the crust with the beaten egg.
  12. Bake for 25 to 30 minutes, until the crust turns golden brown and the cherries become tender.
  13. Cool slightly before serving.

Notes

  1. Serve warm, chilled, or at room temperature.
  2. Fresh sweet cherries give the best flavor and texture.
  3. Frozen cherries may be used if thawed and drained well.
  4. Add a small amount of almond extract or lemon zest for extra flavor if desired.
  5. Serve with vanilla ice cream or whipped cream for a classic summer dessert.
