Description

Peanut Butter Chicken is a quick and healthy 15 minute chicken dinner with a creamy takeout style sauce that coats every bite.


Ingredients

  • lb chicken breast, cut into bite-sized pieces
  • 3 tablespoon cornstarch or almond flour
  • ¼ cup natural peanut butter
  • ¼ cup hoisin sauce or teriyaki sauce
  • 3 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic, minced
  • ⅔ cup water
  • 2 tablespoon cooking oil
  • ½ tablespoon sesame seeds, optional
  • 1 tablespoon green onions, chopped, optional

Instructions

  1. Toss chicken breast pieces with cornstarch until evenly coated.
  2. Whisk peanut butter, hoisin sauce, soy sauce, sesame oil, garlic, and water in a bowl until smooth.
  3. Heat cooking oil in a skillet over medium heat and add coated chicken in a single layer.
  4. Cook for 5 to 6 minutes, turning occasionally, until chicken is no longer pink and lightly browned.
  5. Pour peanut butter sauce into the skillet and stir to coat the chicken evenly.
  6. Cook for 4 to 5 minutes until the sauce thickens and clings to the chicken.
  7. Remove from heat and garnish with sesame seeds and chopped green onions before serving.

Notes

  1. Use peanut butter with no added sugar or salt for best flavor balance.
  2. Cook chicken in batches if needed to avoid overcrowding the skillet.
  3. Taste and adjust the sauce before adding it to the pan if desired.
  4. Store leftovers in an airtight container in the refrigerator for up to 5 days.
  5. Freeze in a sealed container for up to 6 months.
  6. Reheat gently in the microwave or in a skillet over medium heat with a splash of water if needed.
