Description

Chinese Chicken and Broccoli Stir Fry that tastes better than takeout and cooks fast at home.


Ingredients

20 ounces chicken breast sliced

3 tablespoons water

1 tablespoon Shaoxing wine

½ teaspoon kosher salt

¼ teaspoon baking soda

2 tablespoons cornstarch

1 tablespoon neutral oil

⅔ cup light soy sauce

⅔ cup water

4 tablespoons sugar

2½ tablespoons cornstarch

1½ teaspoons sesame oil

1 pound broccoli florets

1½ tablespoons garlic minced

1½ tablespoons ginger minced


Instructions

1. Mix chicken with water, wine, salt, and baking soda

2. Add cornstarch and oil, then rest

3. Whisk sauce ingredients together

4. Blanch broccoli briefly and drain

5. Cook chicken in hot oil and remove

6. Cook garlic and ginger briefly

7. Add sauce and simmer until glossy

8. Return chicken and broccoli and toss

Notes

Freeze chicken slightly before slicing

Serve immediately for best texture
